Turkish radish salad, or turp salatası, is grated radish and carrot tossed with minced garlic, olive oil, white wine vinegar, and parsley, then chilled. You mix everything in one bowl and let it rest in the fridge before serving.

Serves 4-6

Ingredients

  • 2 radishes, coarsely grated
  • 2 carrots, peeled and grated fine
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • ¼ cup white wine vinegar
  • 2 tablespoons coarsely chopped fresh parsley leaves
  • Salt and black pepper

Method

Place all the ingredients in a bowl, and season with salt and pepper. Mix well, cover the bowl, and refrigerate for at least 15 minutes. Served chilled or at room temperature.
