Cold ayran aşı is a Turkish yogurt soup eaten chilled in summer, made by whisking yogurt and strained yogurt, then folding in cooked wheat and chickpeas and thinning it with cold water.

Cold ayran aşı soup is a mainstay of the Turkish summer table and can be enjoyed chilled or lukewarm. Thanks to bulgur and chickpeas, cold ayran aşı soup makes for a satisfying and light main meal: practical, tasty, and nutritious. It sits in the same cool, yogurt-forward family as many Turkish soups, and pairs well with the broader range of Turkish mezes on a warm-weather table.
